Carmelitas

Every time I make this dessert I have people asking for the recipe, the flavors are amazing and it's always a hit!
If you've never had Carmelitas before then I'll break them down a little bit for you, there's a delicious cookie layer on the bottom, layers of chocolate chips and melted caramel are next, and then it's topped with another layer of the cookie mixture. Do yourself a favor and make them now, you'll be so glad you did :)
As always I got pictures showing the process, and the full recipe (with ingredients and directions listed at the bottom).
You'll start off mixing together melted butter and brown sugar.
You'll then add oats, flour, and baking soda.
You'll stir it until it's all mixed together.
You'll then press it into the bottom of a 9x13 cake pan that's lined with parchment paper.
You'll then bake it.
While the bottom layer is baking, you'll make the caramel.
These are the ones I use, it's an 11 0z bag (there are about 35 caramels)
Melt them...
Once the bottom layer has finished baking, you'll add the chocolate chips,
and the melted caramel
Spread it around so the bottom cookie layer is completely covered.
Then crumble the remaining cookie mixture on top.
And then bake again.
Once it's completely cooled, you'll lift it out of the cake pan,
And cut it into bars. I can get about 40 bars from this recipe, but you can cut them larger or smaller.
Then enjoy!

Ingredients
1 c. + 2 Tbsp. unsalted butter, melted
1 c. + 2 Tbsp. brown sugar
1 1/2 c. all purpose flour
1 1/2. oats
1 1/2 tsp. baking soda
1 11 oz package of caramels
3 Tbsp heavy whipping cream
1 c. chocolate chips

Directions
Preheat the oven to 350.
In a large mixing bowl, mix together the melted butter and brown sugar.
Once it's combined, add the flour, oats, and baking soda and stir it all together.
Line a 9x13 cake pan with parchment paper, take 1/3 of the cookie mixture and press it into the bottom of the cake pan.
Bake for about 10-12 minutes or until it turns a light golden brown color.
While the cookie layer is baking, unwrap caramels and place in a microwave safe bowl with the heavy whipping cream. Microwave in 30 second intervals, stirring between, until caramel is completely melted.
Remove cake pan from the oven and sprinkle chocolate chips on top of the cookie layer.
Pour melted caramel over the chocolate chips.
Crumble the remaining cookie mixture on top and return cake pan to the oven.
Bake for about 15 minutes, or until golden brown.
Remove from the oven and let it cool completely.
Lift the parchment paper from the pan and cut the dessert into bars.
